Dragon Fruit Pudding
Ingredients-
- Dragon Fruit - 2 (we've used the pink variety)
- Condensed Milk - 1 tablespoon
- Ghee - 1 tablespoon (using too much ghee can make the halwa release excess ghee, so use sparingly)
- Milk - 1/2 cup
- Sugar - 50 grams
- Rose Flower - 2
- Cardamom Powder - 1 teaspoon
- Almonds - 20 grams
- Pistachios - 10 grams
For Decoration:
- Poppy Seeds
- Finely Chopped Pistachios
- Dragon Fruit Pieces
- Green Leaves
Dragon Fruit Pudding Method:
First, peel the dragon fruit and cut the pink part into small pieces. Blend the chopped dragon fruit pieces and rose petals into a paste using a mixer.
Grind the whole almonds, pistachios, and cardamom into a coarse powder.
Heat ghee in a thick-bottomed pan or non-stick vessel, and sauté the dragon fruit and rose petal paste on low heat until the raw smell is gone.
Add milk and cook for a few more minutes. Then, add the ground almonds and cook the mixture for at least 15 minutes until everything is well combined.
Add saffron strands, condensed milk, a few rose petals, and sugar. Mix everything well and continue cooking until the sugar dissolves completely and the mixture starts to leave the sides of the pan.
Turn off the heat.
The Dragon Fruit Halwa is ready. Garnish it with finely chopped pistachios, green leaves, and dragon fruit pieces, and serve.
