Ingredients:

  • Almonds - 100 grams
  • Milk - 1 cup
  • Sugar - 1 bowl
  • Cardamom - 2
  • Ghee - 1 tablespoon
  • Edible yellow color (optional)

For decoration:

  • Some dried rose petals and sliced dry fruits

Method to Make Almond Halwa:

Soak Almonds: First, wash the almonds thoroughly and soak them for 6-7 hours. Once they are well-soaked, peel off their skins and grind them finely in a mixer. Use a little milk instead of water while grinding.

Heat Milk: Heat the milk until it comes to a boil 2-3 times.

Cook Almond Paste: In a non-stick pan or a heavy-bottomed vessel, heat a little ghee and roast the ground almonds. Roast until the almond mixture becomes slightly thick.

Add Milk: Now, add the boiled milk to the mixture and keep stirring continuously. Add a little edible yellow color to change the halwa's color (optional).

Cook and Flavor: When the mixture is well-cooked and thickens, add ground cardamom and dried rose petals. Add some almond slivers as well. Once the mixture becomes one and starts leaving the sides of the pan, add sugar.

Finish: The sugar will release some moisture, making the mixture slightly thin. Stir it for another 1-2 minutes, then turn off the heat.

Decorate and Serve: The almond halwa is ready. Decorate it with dry fruits and rose petals as desired.

Note:
  • You can adjust the quantity of any ingredient according to your taste.
  • Keep the flame medium.
  • The edible yellow color is optional; you may choose to omit it.

Dragon Fruit Pudding Recipe

 

     Dragon Fruit Pudding

Ingredients- 

  • Dragon Fruit - 2 (we've used the pink variety)
  • Condensed Milk - 1 tablespoon
  • Ghee - 1 tablespoon (using too much ghee can make the halwa release excess ghee, so use sparingly)
  • Milk - 1/2 cup
  • Sugar - 50 grams
  • Rose Flower - 2
  • Cardamom Powder - 1 teaspoon
  • Almonds - 20 grams
  • Pistachios - 10 grams

For Decoration:

  • Poppy Seeds
  • Finely Chopped Pistachios
  • Dragon Fruit Pieces
  • Green Leaves

Dragon Fruit Pudding Method:

First, peel the dragon fruit and cut the pink part into small pieces. Blend the chopped dragon fruit pieces and rose petals into a paste using a mixer.

Grind the whole almonds, pistachios, and cardamom into a coarse powder.

Heat ghee in a thick-bottomed pan or non-stick vessel, and sauté the dragon fruit and rose petal paste on low heat until the raw smell is gone.

Add milk and cook for a few more minutes. Then, add the ground almonds and cook the mixture for at least 15 minutes until everything is well combined.

Add saffron strands, condensed milk, a few rose petals, and sugar. Mix everything well and continue cooking until the sugar dissolves completely and the mixture starts to leave the sides of the pan.

Turn off the heat.

The Dragon Fruit Halwa is ready. Garnish it with finely chopped pistachios, green leaves, and dragon fruit pieces, and serve.

Guava Pudding Recipe

Ingredients for Guava Pudding/Halwa-

  • Guava - 600 grams,
  • Mawa / Khoya - 150 grams,
  • Sugar - 1 cup
  • Cashews (Chopped) - 9-10,
  • Almonds(Chopped) - 9-10,
  • Ghee - 2 spoon,
  • Cardamom  Powder - 1/4 tbsp.
  • For decoration - Saffron, mint leaves.

Guava Pudding



How to make Guava Pudding/Halwa-

First, Boil the guava in the pressure cooker,  until the first whistle blows. Now  grind guava and make puree, and filter this puree so that the seeds are removed. Now put ghee in a pan and fry the guava filtered puree in it for 5 to 10 minutes.  Now add mawa to it and roast it for 5 more minutes. Add the filtered puree to the roasted dry fruits. Add a cup of sugar to it and cook till sugar dissolves with it. The sugar has dissolved after 3 minutes. Add the cooked Mawa to it and roast while stirring it for 3-4 minutes. Add a 1/4 teaspoon of cardamom powder to it and mix it.

The pudding has reached to its thicker consistency, it has cooked so switch off the flame and pour it in a serving bowl. The guava pudding is ready to be served. Garnish it with finely chopped dry fruits, saffron, mint leaves and serve it.

You can store it in the refrigerator and consume for a week. 


Note-


1. You can increase or decrease the ingredients according to your taste.
2. You can use green food color. (If you want natural food coloring than you can use 2-3 beetroot juice drops).
